About the Recipe
This crowd pleaser is nice enough to serve to guests - but simple enough the kiddos still love it. Since you make everything in one bowl, cleanup is a breeze. It is also easy to double the recipe and freeze the second batch for a day cooking isn't in the cards - or to give to a friend who needs dinner for the night!

Ingredients
1 1/2 lbs Cheese Tortellini (fresh or frozen)
2 cups cooked chicken (using a rotisserie chicken works great!)
8 oz Pesto
2 jars Alfredo Sauce
1 cup Mozzarella
OPTIONAL:Â 1/2 tsp red pepper flakes
Â
Preparation
Step 1
Spray 9x12 foil pan with cooking spray.
Step 2
Mix all ingredients together in a large bowl and pour in prepared pan.
Â
Step 3
If freezing, cover with plastic wrap and foil.
Step 4
When ready to bake, thaw, then bake at 375 degrees with foil on for 50 minutes. Then bake for 10 minutes with foil off.

Pioneer Tip:
When I make this recipe, I always double it—and cook one for dinner and put the other in the freezer for a day I don’t feel like cooking!
