Pioneer Chocolate Cake

About the Recipe

With minimal ingredients this cake comes together quickly! For even more time savings - make several mixes ahead of time. The mixes make a great gift for friends, especially around the holidays!

Ingredients

· 2 cups all purpose flour

· 1 1/2 cups sugar

· 2 tsp baking powder

· 1/2 tsp salt

· 1/3 cup unsweetened cocoa powder

· 1/2 cup melted butter

· 1 tsp pure vanilla extract

· 2 eggs

· 1 cup milk

 

Preparation

Step 1

Combine flour, sugar, baking powder, salt and cocoa powder in a large bowl.  If making a mix to share, add these ingredients in an airtight container and attach instructions below.

Step 2

Cream the dry ingredients with melted butter, vanilla and eggs.

Step 3

Add milk slowly and stir well.

Step 4

Pour batter in to greased 9”x13” pan (or 2 8” square/round pans) and bake at 350° for 30 minutes or until toothpick inserted in middle comes out clean.

Notes

Label for mix:  You Need:  1/2 cup unsalted butter (melted),  2 large eggs, 1 tsp pure vanilla extract, 1 cup milk.

 Preheat oven to 350°.  Cream the cake mix with the melted butter,  vanilla and eggs.  Add the milk slowly and stir.  Pour in to 9”x13” (or 2 9” round) baking pan(s) and bake for 25-30 minutes or until toothpick inserted in middle comes out clean. Enjoy!

Variations (pick one): Add 1 cup chopped pecans; add 1/2 cup chocolate chips; add 1 tsp mint extract—omit vanilla; replace 1 egg with smashed banana; add 1/2 cup shredded coconut.
